Tokyo Kaikan New Main Building – The Reborn “Restaurant Prunier”

A look at “Restaurant Prunier,” the newly reborn main dining of Tokyo Kaikan!

Tokyo Kaikan, reborn and reopened on Tuesday, January 8, 2019.

Its main dining, “Restaurant Prunier,” made a fresh start welcoming Chef Hiroyuki Matsumoto, who honed his craft at renowned restaurants in Japan and abroad and long served as head chef at Restaurant FU.

The signature dish handed down since the founding – “Sole bonne femme with spirits” – honors the traditional flavor while taking on a lighter finish, reducing the amount of butter and cream and changing the garnish from bread to truffle-scented nouilles (flat noodles). Rather than simply stripping away the richness, Chef Matsumoto reconstructs the recipe passed down through generations with his own sensibility, expressing “NEW CLASSICS.” on the plate.

“Classic” and “modern” in French cuisine. We hope longtime fans – and also generations who have never experienced so-called “traditional French cuisine” – will come and experience it.
